Chef Tse’s Apple Shallot Dressing

Ingredients

  • 3 Tbsp apple, finely grated

  • 1 tsp shallot, finely grated

  • 1/2 tsp ginger, finely grated

  • 1 Tbsp white wine vinegar

  • 1 tsp Dijon mustard

  • 3 Tbsp extra virgin olive oil

  • Salt and pepper to taste

Directions

  1. Whisk together apple, shallot, ginger, vinegar, Dijon in a small bowl with a pinch of salt and pepper. Slowly whisk in olive oil. For a creamier dressing, blend together all ingredients except oil. Once smooth, keep the blender running and slowly add the oil.
