Grilled Shrimp with Mango Salsa

Ingredients

Mango Salsa: 

  • 2 ripe mangos, cubed 

  • ¼ red onion, finely chopped 

  • ½ jalapeno, seeded and finely chopped 

  • ½ bunch fresh cilantro, chopped 

  • 1-1½ limes, juiced  

  • ¼ tsp kosher salt 

Grilled Shrimp:  

  • 1-1½ lbs raw shrimp, peeled and deveined 

  • 2 Tbsp olive oil 

  • ½ lime, juiced 

  • 1 tsp paprika 

  • ½ tsp garlic powder 

  • ¼ tsp chili powder 

  • ¼ tsp black pepper 

  • ¼ tsp kosher salt 

Directions

  1. Pre-heat grill to medium-high heat. Soak wooden skewers in water prior to use. 

  2. For the salsa, wash and chop vegetables and add to medium bowl. Cube mangos and add to bowl, stir until all ingredients incorporated. Season with lime juice and salt to taste. Let mango salsa sit while preparing the shrimp. 

  3. For the shrimp, thread shrimp onto skewers. Drizzle both sides with olive oil and lime juice. Season with spices and salt. Place shrimp skewers on grill and cook for 2-4 minutes per side, or until cooked through. Remove from heat. 

  4. Top grilled shrimp skewers with mango salsa. Serve and enjoy! 

Notes

  • Select slightly soft, but still firm mangos for best flavor and texture.  

  • Add color and variety to the salsa as desired. Red bell pepper, pineapple, or avocado would all be delicious with this recipe.  

  • Serve shrimp and salsa over rice, salad greens, tostadas or with tortilla chips.
