Prep Time: 40 mins | Cook Time: 15 mins | Serves: 8

Ingredients

  • 1 c whole wheat flour*

  • 1 Tbsp brown sugar

  • 1 tsp ground cinnamon

  • ½ tsp baking soda

  • ¼ tsp salt

  • 3 Tbsp butter*, softened

  • 1 Tbsp honey

  • 1 tsp vanilla extract

Directions

  1. Whisk together flour, sugar, cinnamon, baking soda and salt. Set aside.

  2. In another bowl, beat butter until light and fluffy, then add flour mixture until incorporated and a soft dough forms. Add the honey and vanilla extract. The dough should be sticky and soft.

  3. Roll into a 1/8 inch slab between two sheets of parchment. Transfer the parchment to a baking sheet and refrigerate for 30 minutes.

  4. Preheat oven to 350 F. Remove the top parchment and make rectangle scores and poke holes.

  5. Bake 12-15 minutes. Immediately cut along the pre-scored lines with a knife. Then cool to room temperature on the baking sheets. If the graham crackers are not crisp, bake again in a 325 F oven, checking every 3 minutes, until a shade darker in color.
