No-Bake Peanut Butter Brownie Bars

Ingredients

Brownie Layer

  • 1 c walnuts

  • ½ c raw almonds

  • 1 c dates

  • ¼ c dark chocolate chips

  • ½ c unsweetened coco powder

  • 1 pinch salt

Peanut Butter Layer

  • ½ c dates

  • ½ c almonds

  • 1 c roasted salted peanuts

  • ½ c natural peanut butter

Directions

  1. Start with the brownie layer by pulsing the dates in a food processor. Set aside. Add walnuts, almonds, chocolate chips and cocoa powder in the processor until well combined. Add dates until a dough like texture is formed, if too dry add a few more dates or a few tablespoons of water.

  2. Press into 8x8” pan lined with parchment paper or plastic wrap. Press until flat with hands or spatula. Put in freezer.

  3. To make the peanut butter layer, process the dates until small bits remain, remove and set aside. Then add almonds and peanuts pulse and set aside. Add back in peanut butter and dates, pulse until well combined.

  4. Add to chocolate layer and push down until smooth.

  5. Freeze for about 15 minutes before removing and cutting. Cut into about 20 squares.
