Nordic Flourless Nut Bread

Prep Time: 10 mins | Cook Time: 1 hr | Makes: 16 slices

Ingredients

  • 1 c almonds, chopped

  • 1 c walnuts, chopped

  • 1 c hazelnuts, chopped

  • 2/3 c pumpkin seeds

  • 2/3 c chia seeds

  • 1/2 c sesame seeds

  • 2/3 c ground flax seeds

  • 2 tsp salt

  • ½ c extra virgin olive oil

  • ½ c water

  • 5 eggs

Directions

  1. In a large bowl, combine all dry ingredients.

  2. In a small bowl, whisk eggs, oil, and water. Combine in the big bowl and mix well.

  3. Line a loaf pan with parchment paper. Pour in the batter and smooth. Set oven to 350 degrees. Place the pan in the oven while it is still cold. Bake for 60 minutes (don’t pre-heat the oven). Let the bread cool completely before removing it from the pan.

  4. To serve, slice thinly and top with avocado, smoked salmon, or nut butters.

Notes

  • Substitute your favorite nuts or add dried cranberries
