Pear and Walnut Crisp with Fresh Ginger

Ingredients

  • 7 large firm but ripe pears, peeled, cored and cut into 1/2 inch pieces

  • 1 1/2 tsp fresh grated ginger

  • 2 Tbsp granulated sugar

  • 1 Tbsp freshly squeezed lemon juice

  • 2 tsp cornstarch

  • 1 c quick cooking oats

  • 1/3 c whole wheat pastry flour

  • 1/3 c brown sugar, packed

  • 1 tsp ground ginger

  • 1/3 c walnuts, toasted and chopped

  • 4 Tbsp unsalted butter, cut into small pieces

Directions

  1. Preheat oven to 350 degrees.

  2. In a large bowl, mix together pears, grated ginger, granulated sugar, lemon juice, and cornstarch. Pour into an 8x8 or 9x9 baking dish.

  3. In a medium bowl, mix together oats, flour, brown sugar, ground ginger, and walnuts. Add butter and work into mixture using fingers until well incorporated. Sprinkle topping over the pears.

  4. Bake in oven for 45 minutes. Let cool on a wire rack 15 minutes.

  5. Serve warm.
