Pumpkin Spice Chocolate Chip Cookies

Ingredients

  • 1 c canned pumpkin puree

  • 1 c white sugar

  • ½ c vegetable oil

  • 1 egg

  • 1 Tbsp vanilla extract

  • 1 c whole wheat flour

  • 1 c white flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • ½ tsp ground ginger

  • ¼ tsp nutmeg

  • ¼ tsp ground cloves

  • ½ tsp salt

  • 1 ½ c dark chocolate chips

Directions

  1. Preheat oven to 350°F.

  2. In large bowl combine pumpkin puree, sugar, oil, egg and vanilla. Stir until well combined.

  3. In separate bowl combine flours, baking powder, baking soda, spices, and salt.

  4. Add dry ingredients to pumpkin mixture and stir until well combined.

  5. Add chocolate chips to dough and fold in until well combined.

  6. Drop tablespoon-sized scoops of cookie dough onto greased cookie sheet. Bake for 10-12 minutes, or until lightly browned and firm.
