Southwestern Skillet Corn Cakes

Prep Time: 5 mins | Cook Time: 15 mins | Serves: 4

Ingredients

  • ¾ c masa harina

  • ¼ c all-purpose flour*

  • ½ tsp baking powder

  • ¼ tsp salt

  • ¼ c grated jack cheese*

  • 1 ear corn, kernels

  • ½ c warm water

  • 1 tsp oil, for frying

Directions

  1. Mix together masa harina, flour, baking powder, and salt. Stir in cheese and corn kernels. Add water and massage with your hand, adding more water as needed until mixture holds together.

  2. Dab a paper towel with the oil and wipe the skillet surface — cast iron or nonstick. Heat on medium high.

  3. Scoop a heaping 1/3 cup mixture, and use your hands to shape into a patty, about ½ inch thick. Repeat, forming four patties. Fry patties, 2-3 minutes per side, until golden brown.

Notes

  • Suggested toppings: black beans, avocado, peppers, onions, salsa.

  • *For a gluten-free option, use 1:1 gluten-free flour; diary-free option, use vegan cheese.
