Taco Truck Salsa Verde

Prep Time: 5 mins | Cook Time: 5 mins | Makes: 1 C

Ingredients

  • 1 zucchini, chopped, about 2 c of chunks

  • 2 whole scallions, chopped

  • 1 garlic clove

  • 3 Tbsp lime juice

  • 3 Tbsp olive oil

  • ½ tsp kosher salt

  • ½ tsp ground cumin

  • 1 c cilantro, chopped

  • ¼ jalapeño, optional

Directions

  1. Blend in a high-speed blender until creamy.

  2. Remove to a jar; it will keep refrigerated for 3 days.

  3. Serve drizzled over tacos, or as a dressing over roasted chicken or vegetables.

Notes

  • Substitute the cilantro and cumin with any of your favorite fresh herb and spice combinations, such as basil and oregano.
