Tuscan Black Bean Tuna Salad

Ingredients

  • 2 c cooked black beans, drained

  • 1 stalk celery, chopped, including leaves

  • 1 (6 oz) can high-quality tuna, drained

  • 6 marinated artichoke hearts quarters

  • 1/3 c red onion, diced

  • 1/3 c parsley, minced to serve

Dressing

  • 1 Tbsp extra-virgin olive oil

  • 1 Tbsp red wine vinegar

  • 1 tsp Dijon mustard

  • pepper to taste

Directions

  1. Quarter the artichoke hearts.

  2. Combine salad ingredients, careful not to mash the beans.

  3. Combine dressing ingredients and toss with the salad. Serve with parsley.
