Vegetable Soup

Prep Time: 15 mins | Cook Time: 1 hour

Ingredients

  • ½ large onion, chopped

  • 2 gloves garlic, minced

  • 1 c green beans, chopped

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 1 zucchini, chopped

  • 5-6 basil leaves, chopped, about 2 Tbsp

  • 2 c homemade or low-sodium vegetable broth

  • ½ tsp black pepper

  • 2 Tbsp chopped fresh basil

  • 2 cans of diced tomatoes (use low-sodium if needed)

Directions

  1. Combine all ingredients in a pot and bring to a simmer over low heat.

  2. Simmer for one hour, stirring occasionally.

  3. Serve and enjoy!
