Coconut Cinnamon Oatmeal Squares

Prep Time: 15 mins | Cook Time: 35 mins | Makes: 12 squares

Ingredients

  • 3 c rolled oats

  • 1 c dried cranberries, raisins, or dates

  • 2 tsp baking powder

  • 2 tsp cinnamon

  • 2 Tbsp honey

  • 1/2 c apple sauce

  • 2 large eggs

  • 1/4 c light olive oil

  • 2 tsp vanilla extract

  • 2 Tbsp shredded, unsweetened coconut

  • 1/2 c low-fat yogurt

  • 1/2 c low-fat milk

Directions

  1. Preheat oven to 350°. Combine first three ingredients and 1 ½ teaspoons cinnamon in a large bowl.

  2. In another bowl, mix together next seven ingredients until well combined.

  3. Add liquid to dry ingredients and stir thoroughly.

  4. Pour this mixture into a lightly oiled 8"x8" baking dish. Bake for 30-35 minutes.

  5. Sprinkle top with coconut and remaining ½ teaspoon cinnamon. Let it cool 10-15 minutes before cutting.

Notes

  • Add your favorite nuts or seeds.

  • These are great on-the-do, or crumbled, heated, and topped with yogurt and fruits.
