Coconut Cinnamon Oatmeal Squares

Prep Time: 15 mins | Cook Time: 35 mins | Makes: 12 squares
Ingredients
3 c rolled oats
1 c dried cranberries, raisins, or dates
2 tsp baking powder
2 tsp cinnamon
2 Tbsp honey
1/2 c apple sauce
2 large eggs
1/4 c light olive oil
2 tsp vanilla extract
2 Tbsp shredded, unsweetened coconut
1/2 c low-fat yogurt
1/2 c low-fat milk
Directions
Preheat oven to 350°. Combine first three ingredients and 1 ½ teaspoons cinnamon in a large bowl.
In another bowl, mix together next seven ingredients until well combined.
Add liquid to dry ingredients and stir thoroughly.
Pour this mixture into a lightly oiled 8"x8" baking dish. Bake for 30-35 minutes.
Sprinkle top with coconut and remaining ½ teaspoon cinnamon. Let it cool 10-15 minutes before cutting.
Notes
Add your favorite nuts or seeds.
These are great on-the-do, or crumbled, heated, and topped with yogurt and fruits.
