Southwestern Potato Salad

Prep Time: 10 mins | Cook Time: 25 mins | Serves: 2

Ingredients

  • 1 can black beans

  • 1 lb baby red potatoes

  • 1 c red bell peppers, sliced

  • 1 c celery, sliced

  • 1 c red onions, chopped

  • 1/2 c cilantro, chopped

  • Spiced Vinaigrette Dressing

  • 4 c mixed greens

Directions

  1. Put the potatoes in a medium pot and cover with water. Bring to a boil over medium heat and cook the potatoes until tender, about 15–20 minutes. Drain and set aside to cool.

  2. Drain and rinse the black beans. In a medium bowl, combine first 6 ingredients. Add spiced Vinaigrette Dressing to taste and mix well.

  3. Serve over mixed greens, with additional dressing on the side.
