Southwestern Potato Salad

Ingredients
1 can black beans
1 lb baby red potatoes
1 c red bell peppers, sliced
1 c celery, sliced
1 c red onions, chopped
1/2 c cilantro, chopped
4 c mixed greens
Directions
Put the potatoes in a medium pot and cover with water. Bring to a boil over medium heat and cook the potatoes until tender, about 15–20 minutes. Drain and set aside to cool.
Drain and rinse the black beans. In a medium bowl, combine first 6 ingredients. Add spiced Vinaigrette Dressing to taste and mix well.
Serve over mixed greens, with additional dressing on the side.
