Carrot Cake Overnight Oats

Ingredients

  • ½ c rolled oats

  • ½ c shredded carrot

  • 2 Medjool dates, pitted and chopped

  • 1 Tbsp ground flaxseeds

  • 1 Tbsp pumpkin seeds

  • 1 tsp ground cinnamon

  • pinch ground nutmeg

  • ½ c unsweetened almond milk

  • ½ c hot water

Directions

  1. Layer the oats, carrot, dates, flaxseeds, pumpkin seeds, cinnamon, and nutmeg in a glass jar with a lid. Add the milk. Cover and shake well. Chill overnight or up to two days. For warm oats, just before eating, add ½ cup hot water and stir. For cold oats, add additional milk.
