No-Bake Berry Tart

Prep Time: 5 mins | Cook Time: 35 mins | Serves: 8

Ingredients

  • 3 c dates, pitted and finely chopped

  • ¼ c rolled oats

  • ½ c slivered almonds

  • 1 c mashed berries: strawberries, raspberries, or blueberries

  • 1 c fresh berries

Directions

  1. In a food processor, pulse almonds until finely chopped. Add dates and oats and pulse until all ingredients are well mixed.

  2. Press mixture into an 8-inch round baking dish. A tart pan with removable sides works well. Top with mashed berries.

  3. Cover and let sit at least 30 minutes. Then top with fresh berries.

  4. To serve, top slices with fresh mint and a dab of Greek yogurt.
