Berry Crisp

Prep Time: 15 mins | Cook Time: 25 mins | Serves: 8

Ingredients

  • 4 c berries, such as blueberries, raspberries, blackberries, strawberries

  • 1 lemon juice and zest

  • 1 tsp cinnamon

  • ½ c of pure maple syrup

  • 1 tsp vanilla extract

  • 2 Tbsp cornstarch

  • 1 Tbsp water

Topping

  • 1 c oats

  • ¼ c pure maple syrup

  • ½ tsp cinnamon

  • 3 Tbsp melted butter

  • ½ c chopped nuts, such as walnuts or hazelnuts

Directions

  1. 1. Preheat oven to 350 degrees.

  2. Spray lightly an 8”X8” baking dish with cooking spray.

  3. Add the berries, cinnamon, vanilla, syrup, and lemon to a mixing bowl and mix.

  4. Then add cornstarch and water, mix.

  5. Transfer the berry mix to the baking dish.

  6. Combine the oats, syrup, cinnamon, nuts and butter and mix.

  7. Spread the topping evenly onto the berries.

  8. Bake for 25 minutes or until the topping is crunch and golden brown.

Notes

  • For a non-dairy option, substitute melted butter for coconut or oilve oil.

  • Use other fruit in different seasons and frozen berries too!
