Cauliflower Mac and Cheese

Prep Time: 10 mins | Cook Time: 35 mins | Serves: 12

Ingredients

  • 8 c chopped cauliflower, 1/2- inch pieces

  • 1 Tbsp butter

  • 2 tsp olive oil

  • ½ yellow onion, minced

  • 3 Tbsp whole wheat flour

  • 2 c fat free milk

  • 7 oz grated cheddar cheese

  • ½ tsp salt

  • ¼ tsp black pepper

Directions

  1. Preheat oven to 400 degrees.

  2. Place 1 inch of water in a large pot and bring to a boil. Add chopped cauliflower and cook until tender, about 6-7 minutes.

  3. Heat butter and olive oil in a large sauce pan over medium heat. Add onions and cook for about 2 minutes.

  4. Stir in flour. Reduce heat to low and cook, continue to stir for 3-4 minutes.

  5. Add milk and continue whisking, raising the heat to medium-high until it comes up to a boil and is smooth and thick, about 2 minutes, season with salt and pepper.

  6. Once it is thick, turn off the heat and then add cheddar cheese. Continue to whisk until cheese melted.

  7. Stir in cauliflower and then add to baking dish and bake for about 15 minutes. Then broil 2 minutes or until the top is slightly browned.

Notes

  • For a gluten-free option, use gluten free flour.
