Easy Breakfast Bars

Prep Time: 10 mins | Cook Time: 20 mins | Serves: 10

Ingredients

  • 1 c (heaping) pitted dates

  • 1/4 c maple syrup

  • 1/4 c all-natural nut butter (peanut, almond, cashew, etc)

  • 1 c roasted unsalted almonds, chopped

  • 1 1/2 c rolled oats

  • Optional add-ins: Chocolate chips, dried fruit, nuts, banana chips, vanilla, etc.

Directions

  1. Blend dates in a food processor or blender to make a dough-like consistency.

  2. Place oats, almonds, and dates in a large mixing bowl – set aside.

  3. Warm maple syrup and nut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, break up dates evenly in mixture.

  4. Transfer mixture to an 8×8-inch baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. Press down firmly until evenly flattened.

  5. Cover and let firm up in fridge or freezer for 15-20 minutes.

  6. Remove bars from pan and chop into 10 even bars.

Notes

  • Toast oats in oven at 375F for 10-15 minutes or until golden brown before adding rest of ingredients.

  • Roast plain nuts at 350F for 10-12 minutes.
