Food Truck Roast Chicken

Prep Time: 10 mins | Cook Time: 25 mins | Serves: 6

Ingredients  

  • 5 garlic cloves, minced

  • 1 Tbsp ground coriander

  • 2 tsp sweet paprika

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 3 Tbsp lemon juice

  • 2 lbs boneless, skinless chicken thighs,* ½-inch strips

  • 6 c crunchy lettuce, chopped

  • 2 c chopped tomatoes

  • 2 c chopped cucumbers

  • 1 c chopped cilantro

  • ¼ c sliced red onions

White sauce:

  • ½ c low-fat plain yogurt*

  • 1 Tbsp white vinegar

  • ¼ teaspoon sugar

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp kosher salt

  • ¼ tsp black pepper

Directions

  1. Preheat oven to 450 degrees. In a medium bowl, combine first seven ingredients and mix well. Add the chicken and toss to evenly coat. Spread the seasoned chicken in a single layer on a large sheet pan and roast until golden, about 20 minutes. Broil 5 minutes to add charring.

  2. In a small bowl, mix white sauce. Divide chicken, lettuce, tomatoes, cucumbers, cilantro, and onions among six plates. Drizzle with sauce.

Notes

  • *For a vegetarian option, use pressed firm tofu. For a dairy free option, use plant-based yogurt.
