Grilled Artichokes

Ingredients

  • 4 large artichokes

  • 1 lemon, cut into wedges

  • 4 cloves of garlic, minced

  • 1/4 c olive oil

  • Salt and pepper to taste


Directions

  1. Fill a large pot with water and bring it to a boil.

  2. Trim the artichokes by cutting off the top third and trimming the sharp tips of the leaves.

  3. Add the artichokes to the boiling water and cook for about 20 minutes, or until the leaves can be easily pulled off. Remove the artichokes from the water and let them cool.

  4. Cut the artichokes in half and scoop out the hairy choke with a spoon.

  5. In a small bowl, mix the minced garlic, olive oil, salt, and pepper.

  6. Brush the artichokes with the garlic mixture, making sure to get the mixture between the leaves.

  7. Preheat a grill to medium-high heat. Place the artichokes on the grill, cut side down, and grill for about 5-7 minutes, or until grill marks appear.

  8. Serve the grilled artichokes with lemon wedges for squeezing over the top.
