Homemade Pesto

Ingredients

  • 1-2 c soft, leafy fresh herbs (basil, cilantro, mint, parsley)

  • 1-2 cloves garlic, chopped

  • 1/3 c nuts (walnuts, pine nuts, pistachios, almonds, cashews)

  • Parmesan cheese, 3-4 small-medium chunks

  • 1/2 c olive oil

  • salt

  • pepper

Directions

  1. Wash, pat dry, and de-stem herbs. Place in food processor.

  2. Add garlic, nuts, cheese, and olive oil.

  3. Blend until ingredients are well combined and reach the desired consistency, adding more olive oil as needed.

  4. Season with salt and pepper to taste.

Notes

  • If your food processor is small, you may need to do this in batches.

  • This is a great recipe for creativity! Choose the flavors you enjoy or combine herbs and nuts for a new flavor. We encourage you to mix things up!

  • Works great as a sauce, flavor add to soups, a meat or seafood topping (like a chimichurri), mixed into scrambled eggs, or tossed into cooked/roasted veggies.
