Roasted Broccoli with Feta

Prep Time: 5 mins | Cook Time: 20 mins | Serves: 4

Ingredients

  • 1½ lbs broccoli, rinsed

  • 2 Tbsp olive oil 2 tablespoons feta cheese*, crumbled

  • 4 Tbsp pumpkin seeds or Miso Crunch Salad Topping

  • 1 Tbsp fresh lemon juice

  • black pepper to taste

  • kosher salt to taste

Directions

  1. Preheat oven to 400 degrees. Cut head of broccoli into 2-3 inch florets. Peel rough outer skin of stalk and cut lengthwise into half-inch slices.

  2. On a rimmed baking sheet, toss broccoli with olive oil until evenly coated. Roast in oven for about 20 minutes, tossing halfway through, until tender and lightly browned.

  3. Transfer to platter. Toss with feta cheese, pumpkin seeds, lemon juice. Season with salt and black pepper to taste.

  • *For a dairy free option, use plant-based cheese.
