Directions

  1. Start with our base Southwestern Skillet recipe.

  2. Preheat oven to 350.

  3. Wisk together the eggs and milk in a medium bowl and set aside.

  4. Spray muffin tin with oil to prevent sticking.

  5. Add about 1 Tbsp of Southwestern Skillet mixture to each of the muffin cups. Top is egg and milk mixture, filling each cup about 2/3 of the way.

  6. Sprinkle cheese on top.

  7. Bake for 15-20 mins. Eggs should reach an internal temperature of 165 and no longer jiggle.

  8. Enjoy!

Notes

  • For a dairy-free alternative use your favorite non-diary milk alternative.

  • This recipe can also be made as one large frittata by using a baking dish.

  • Meal prep by freeze these frittata cups and microwaving them in the morning.

  • Be creative with your favorite cheeses!
