Southwestern Frittata

Ingredients
6 eggs
1 c milk
½ c of shredded cheddar cheese
Directions
Start with our base Southwestern Skillet recipe.
Preheat oven to 350.
Wisk together the eggs and milk in a medium bowl and set aside.
Spray muffin tin with oil to prevent sticking.
Add about 1 Tbsp of Southwestern Skillet mixture to each of the muffin cups. Top is egg and milk mixture, filling each cup about 2/3 of the way.
Sprinkle cheese on top.
Bake for 15-20 mins. Eggs should reach an internal temperature of 165 and no longer jiggle.

Notes
For a dairy-free alternative use your favorite non-diary milk alternative.
This recipe can also be made as one large frittata by using a baking dish.
Meal prep by freeze these frittata cups and microwaving them in the morning.
Be creative with your favorite cheeses!
