Vegan Chocolate Mousse

Ingredients

  • ¼ c cocoa powder

  • ¼ c maple syrup

  • 1 package silken tofu, (16 oz)

  • 1 tsp vanilla extract

  • 1 Tbsp chia seeds

  • 1 avocado, peeled

Directions

  1. Blend chia seeds in blender for several seconds.

  2. Drain tofu of excess water and place on a paper towel.

  3. Add all ingredients into blender and blend until smooth.

  4. Chill mix in serving bowl.

Notes

  • Garnish with chopped nuts, berries, coconut, chocolate chips, mint, etc.

  • To make avocado frosting add 1 avocado and 2 tablespoons each of cocoa powder and maple syrup, blend/mix until smooth.
