Blueberry Peach Breakfast Bake

Prep Time: 10 mins | Cook Time: 25 mins | Serves: 8

Ingredients  

  • 1 c blueberries (fresh or frozen)

  • 1 c peaches (fresh or frozen)

  • 1 c quinoa

  • 2 c milk*

  • 1 Tbsp cinnamon

  • 2 Tbsp maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 375 degrees. Place blueberries, peaches, and quinoa into a 9 x 9 inch baking pan in an even layer.

  2. In a small bowl, whisk together eggs, milk, syrup, cinnamon, and vanilla. Pour over the quinoa and fruit. Bake 60 minutes, until the center is no longer liquid.

Notes

  • *For a dairy free option, use coconut milk.
