Sweet Barley Pilaf

Prep Time: 15 mins | Cook Time: 1 hour | Serves: 6

Ingredients  

  • 1 Tbsp olive oil

  • 1 medium onion (2 c), diced

  • 4 mushrooms (1 c), sliced

  • 1 celery stalk, diced

  • ½ c slivered almonds

  • 1 c barley or other whole grain

  • ¼ c raisins, golden or black

  • Dash of salt

  • 1 Tbsp each fresh rosemary and marjoram, minced, or ½ tsp dried

  • 2½ c chicken or vegetable broth, low-sodium, or use homemade stock.

Directions

  1. In large saucepan, heat olive oil and sauté onion until translucent. Add mushrooms, celery and almonds. Cook 3-5 minutes.

  2. Stir in barley, raisins and seasonings until barley is coated with other ingredients.

  3. Add broth and bring to a boil for 2 minutes, cover and reduce heat to simmer for 55 minutes.

Notes

  • Want to switch out the barley? Use farro, rice or quinoa instead.
