Ingredients
½ Cucumber, grated and blotted to remove moisture
1 c plain, low-fat Greek yogurt
2 garlic cloves, minced
1 Tbsp fresh dill or mint, minced
Juice of 1 lemon (1-2 Tbsp)
Directions
Combining all ingredients in a small bowl. Stir well.
Notes
For an intense herb flavor, process herbs with salt in a spice grinder.
Serve as a dip for vegetables or topping for other great dishes like Provencal Turkey Meatballs.
