Prep Time: 5 mins | Cook Time: 10 mins | Makes: 16 servings
Ingredients
2 c of berries (fresh or thawed frozen)
1-2 Tbsp maple syrup (or alternative sweetener to taste)
2-3 Tbsp chia seeds.
Directions
Place berries and sweetener into a saucepan and bring to a simmer over medium heat.
Once berries appear to melt together or burst in the case of fresh blueberries, gently mash with a fork or potato masher to desired consistency.
Increase heat to medium/high for another 3-5 minutes. Stir consistently so the berries don’t burn.
Turn off heat and starting with 2 Tbsp add chia seed, stirring to combine very well. Add more chia seeds if a thicker consistency is desired.
Cool slightly until mixture appears to thicken.
Transfer to sanitized dry jars and refrigerate or freeze.
Notes
This goes great on top of Chia Pudding!
