Crispy White Bean Croutons

Ingredients  

  • 2 (15 oz) cans reduced-sodium large white beans (cannellini or Great Northern)

  • 3 Tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp kosher salt

  • ½ tsp black pepper


Directions

  1. Preheat oven to 425 degrees. Rinse beans in a strainer, then lay them out on a towel and pat them dry well.

  2. Spread out beans onto a large unlined, rimmed baking sheet. Toss beans in olive oil, garlic powder, salt, and pepper. Roast 20 minutes, stir and redistribute. Roast for another 20 minutes, checking and restirring frequently (approx. every 5-minutes), until beans are golden-brown and crispy.


Notes

  • Try this recipe with any type of canned bean you may have on hand. Garbanzo beans, navy beans, black beans, kidney beans, or pinto beans would all work for this recipe, though you may need to reduce the roasting time if using a smaller bean variety.

  • Using a large sheet pan ensures the beans can spread out while roasting. This allows for even airflow around the beans, instead of steam getting trapped between the beans, which would make for a soft and mushy end-product.

  • Reduce the amount of added salt by half if using regular (as opposed to reduced sodium) canned beans.

  • Use pre-made seasoning blends such as Everything Bagel or Furikake seasonings or create your own unique flavor combinations:

    • Zesty blend: Smoked paprika, sumac, garlic, salt and pepper

    • Italian seasoning blend: Oregano, basil, rosemary, thyme, marjoram, garlic powder, red pepper flakes (optional)

    • Curry spice blend: Turmeric, cumin, coriander, ginger, and chili powder (optional)

  • Use a parchment paper-lined baking sheet to save on clean up.

  • Use croutons on top of salads, soups, grain bowls, or pastas. Or enjoy them all by themselves as a satisfying and crunchy snack.

  • Allow to cool completely before storing. Leftover beans will last in an airtight container for up to a week, though they may lose a bit of their crunchiness.
