Dark Chocolate Pudding

Prep Time: 15 mins | Cook Time: 2 mins | Serves: 8 (1 1/2 oz)

Ingredients  

  • ¾ c (4½ oz) 70% dark chocolate, melted

  • ½ c cooked short grain rice

  • ¾ - 1 c just-boiled water

Directions

  1. Melt chocolate in a microwave in 30-second intervals until completely melted.

  2. In a blender, combine cooked rice, water, and the melted chocolate. Blend until smooth.

  3. Pour into serving bowls. Serve warm or cold.

Notes

  • If not serving immediately, place a piece of plastic wrap over the top to prevent a skin from forming.
