Marinated Tuna Salad

Prep Time: 15 mins | Cook Time: 5 mins | Serves: 4

Ingredients  

  • 2 (5 oz) cans tuna* (or mackerel or salmon), drained

  • 2 c thinly sliced kale

  • 1 c thinly sliced red cabbage

  • 1 c chopped parsley

  • 1 medium orange, peeled and sliced after zesting

  • 1 medium apple, sliced

Marinade:

  • 2 oz (1 medium) shallot, minced

  • 1 large lemon, zest and juice (2 Tbsp)

  • 1 orange, zest

  • ¼ c olive oil

  • ¼ tsp kosher salt

  • ½ tsp black pepper

Directions

  1. In a medium bowl add the minced shallots, the zest and juice from the citrus, plus the olive oil, salt, and pepper. Mix well and let sit 5 minutes. Add drained fish to the marinade and stir well.

  2. Place prepared kale, cabbage, and parsely into a large mixing bowl. When ready to serve, add the fish, marinade, and fruit. Toss well.

Notes

  • *For a vegetarian option, substitute crumbled tempeh.
