Mashed Sweet Potatoes

Prep Time: 10 mins | Cook Time: 20 mins | Serves: 6

Ingredients

  • 4-6 sweet potatoes, peeled and cubed 

  • 1/2 Tbsp avocado or olive oil

  • salt

  • 1/2 tsp white pepper

  • Fresh parsley, chopped 

Directions

  1. Peel and cube the sweet potatoes and add to a large pot. Cover the sweet potatoes with cold water.

  2. Bring potato water to a boil and cook over high heat until potatoes are fork tender, about 20 minutes. Once done, strain off the water and return the potatoes to the pot.

  3. Add ½ Tbsp olive oil, salt, and white pepper to taste. Mash the potatoes until well combined and smooth. Serve and enjoy! 

Notes

  • This does great with our Apple Cider Braised Pork Roast! To make as a complete meal, start boiling the potato water once the pork has a remaining cook time of 20-30 minutes.
