Mashed Sweet Potatoes

Ingredients
4-6 sweet potatoes, peeled and cubed
1/2 Tbsp avocado or olive oil
salt
1/2 tsp white pepper
Fresh parsley, chopped
Directions
Peel and cube the sweet potatoes and add to a large pot. Cover the sweet potatoes with cold water.
Bring potato water to a boil and cook over high heat until potatoes are fork tender, about 20 minutes. Once done, strain off the water and return the potatoes to the pot.
Add ½ Tbsp olive oil, salt, and white pepper to taste. Mash the potatoes until well combined and smooth. Serve and enjoy!
Notes
This does great with our Apple Cider Braised Pork Roast! To make as a complete meal, start boiling the potato water once the pork has a remaining cook time of 20-30 minutes.
