Sautéed Zucchini with Feta and Pistachios

Prep Time: 5 mins | Cook Time: 5-8 mins | Serves: 3

Ingredients

  • 1 Tbsp olive oil 

  • 2 medium zucchinis, cut into half rounds 

  • 1 Tbsp honey 

  • 1 Tbsp lemon juice 

  • ¼ c feta cheese, crumbled 

  • ¼ c pistachios, roughly chopped 

  • 1-2 Tbsp fresh dill, roughly chopped 

  • Pinch of salt and black pepper to taste 

Directions

  1. Heat sauté pan over medium heat. Add olive oil to pan and heat until glassy. Add sliced zucchini and pan sear for 3-5 minutes or until golden brown on one side, toss and cook for another 2-3 minutes.  

  2. Remove zucchini from heat and transfer to a serving bowl. Top hot zucchini with a pinch of salt, squeeze of lemon juice, and drizzle of honey. Top with crumbled feta, chopped pistachios, fresh dill, and black pepper.  

  3. Serve and enjoy! 

Notes

  • To avoid soggy zucchini do not overcook and add salt at the end of cooking or just after removing from the heat.  

  • Add a pinch of chili flakes to your olive oil and/or sub hot honey for the regular honey to give this dish a bit of kick.  

  • Though best eaten hot, repurpose any leftovers by reheating in microwave or eating cold on top of salad greens or grain bowls.
