Smoked Salmon Split Pea Chowder

Ingredients
2 c yellow split peas
1 Tbsp extra-virgin olive oil
2 c onion, diced
1 c carrot, diced
2 bay leaves
6 c water or vegetable stock
1/3 c Dijon mustard
8 oz smoked salmon, roughly chopped
freshly ground pepper
fresh chives
Directions
Soak peas in cold water at least an hour. Set aside.
In a medium pot, heat oil and sauté onion, carrots, and bay leaves until onions are translucent, about 5 minutes.
Drain split peas add to pot along with 6 cups fresh water. Bring to boil. Cover and reduce to simmer, stirring occasionally until peas break down into a thick puree, about 45- 60 minutes. Add water as necessary for consistency.
Remove bay leaves. Blend, if you prefer a creamier texture. Then stir in 6 ounces of the salmon, mustard, and pepper.
Ladle into bowls and top with fresh herbs and the remaining salmon.
