Spring Pasta

Prep Time: 10 mins | Cook Time: 15 mins | Serves: 4

Ingredients

  • 1 bag whole wheat penne pasta

  • 5 asparagus spears, trimmed and sliced

  • 1 c chopped greens (swiss chard, spinach, kale, etc.)

  • 1 shallot, chopped

  • 2 garlic cloves, minced

  • ¼ c peas

  • ¼ c parmesan cheese

  • 1 lemon, juiced and zested

Directions

  1. Cook pasta in boiling, lightly salted, water for approximately 8-10 minutes.

  2. Sauté garlic and shallots in large sauté pan.

  3. Add asparagus and greens. Sauté for a couple of minutes. Then add peas.

  4. Add in cooked pasta.

  5. Add lemon and parmesan cheese.

  6. Toss altogether.
