Super Greens Pasta Bake

Ingredients
8 oz dry whole-wheat or protein fusilli (or other pasta)
3 c no-salt added tomato sauce with onions and garlic
1 Tbsp olive oil
1 red bell pepper, diced
1 zucchini, grated with water removed
2 c mushrooms, sliced
4 c dark leafy greens (kale, spinach, Swiss chard or collards)
1 Tbsp dried Italian seasoning or fresh basil and oregano
1 tsp red pepper flakes (optional)
½ c part-skim Ricotta cheese
1 c part-skim mozzarella cheese, shredded
2 c cooked, diced protein, such as chicken or low-fat turkey sausage, optional
Fresh basil, optional
Directions
Preheat oven to 375F. Cook pasta according to package directions, drain
Sauté mushrooms and red bell peppers in olive oil.
In a bowl, combine tomato sauce, ricotta cheese, mushrooms, bell peppers, zucchini, greens and seasonings with pasta and mix. Add optional cooked protein if using. Add salt and pepper to taste.
Pour into an oven-proof casserole dish. Top with mozzarella cheese and bake for 20-30 minutes, until heated through and cheese is bubbly. Top with fresh basil before serving (optional).
Notes
Extra onions and garlic can be added. Be sure to taste the tomato sauce before using and add seasonings if needed. Red pepper flakes can be a spicy addition.
