Walnut Rice Mix

Prep Time: 10 mins | Cook Time: 40 mins | Serves: 6

Ingredients  

  • ¾ c jasmine rice, rinsed

  • 8 oz mushrooms, finely chopped

  • 8 oz sweet potato, thinly sliced

  • ½ c chopped walnuts, plus more for serving

  • ½ tsp kosher salt

  • 1 ½ c water

  • chives, to serve

Directions

  1. Put rice into a small pot, then add mushrooms. Top with sliced sweet potatoes.

  2. On medium heat, bring to a vigorous boil for 2-3 minutes. Cover and reduce heat to low. Simmer 15 minutes, then turn off heat. Add walnuts and stir everything to incorporate and fluff. Cover and let sit to steam 20 more minutes. Top with chives and extra walnuts.
