Poached Pears with Spiced Chocolate Sauce

Prep Time: 5 mins | Cook Time: 20 mins | Serves: 4

Ingredients

  • 4 medium ripe pears

  • ¾ c unsweetened apple juice

  • ¼ c dry red wine

  • 2 c of water

  • 2 or 3 cinnamon sticks

  • 2 oz bittersweet chocolate

  • Pinch of ground cinnamon

  • Pinch of ground nutmeg

  • Pinch of ground allspice

  • Pinch of ground clove

Directions

  1. Peel pears, and core from the bottom. Slice off the bottom if necessary to stand upright.

  2. In a large pot combine apple juice, red wine, cinnamon, and water. Bring to a simmer and add peeled pears. Cook for approximately 15 minutes. Remove with a slotted spoon and set aside.

  3. Place chocolate and remaining spices in a microwave safe bowl and heat on high for 1 minute, stirring every 30 seconds. Stir until smooth. On a dessert plate add pear and a couple of tablespoons of poaching liquid to plate. Drizzle chocolate sauce over pears to serve.
