Wraps-to-Go with Hummus and Curry

Prep Time: 5 mins | Cook Time: 5 mins | Makes: 4 servings

Ingredients  

Spread

  • ½ c hummus

  • 1 Tbsp mango chutney

  • 1 tsp curry powder or to taste

Wraps

  • 4 8-inch whole wheat tortillas

  • ½ lb cooked protein, such as shrimp, sliced turkey or sliced chicken

  • 1 c cilantro or other favorite herbs, chopped

  • 4 tsp chopped peanuts

  • 2 c baby spinach leaves

  • 1 c thinly sliced cucumber

Directions

  1. Mix spread ingredients together.

  2. Spread ¼ of the mixture on each tortilla.

  3. Divide the wrap fillings equally among the tortillas.

  4. Roll and eat!

Notes

  • The suggested amount of meat invites portion control—a little bit goes a long way. Presented buffet style, everyone can build their own wraps
