Pico de Gallo

Prep Time: 10 mins | Cook Time: 10 - 15 mins | Serves: 4

Ingredients  

  • 2 medium ripe tomatoes, diced (about 1½ c)

  • ½ medium white onion, finely diced

  • 1 medium jalapeño, seeded and finely minced (leave seeds in for more heat)

  • ½ c fresh cilantro, chopped

  • 2 Tbsp fresh lime juice (about 1 lime)

  • ¼ tsp salt (adjust to taste)

Directions

  1. Dice tomatoes and onions into small, even pieces. Finely mince the jalapeño and cilantro.

  2. In a bowl, mix tomatoes, onion, jalapeño, cilantro.

  3. Add lime juice and salt. Stir gently.

  4. Let it sit for 10–15 minutes so the flavors meld.

  5. Add more lime, salt, or jalapeño as needed.

Notes

  • If your tomatoes are very juicy, remove some seeds before dicing so it doesn’t become watery.

  • White onions are traditional, but red onions work too.

  • For extra brightness, add a pinch of black pepper.

  • Substitute the tomato and use other fruits such as pineapple or mango.

  • This goes great with breakfast burritos!
