Tofu Scramble

Prep Time: 5 mins | Cook Time: 10 mins | Makes: 2-3 servings

Ingredients  

  • 16 oz block extra-firm tofu, drained and pressed

  • 2 tbsp nutritional yeast

  • ½ tsp turmeric

  • Salt and pepper, to taste

  • 1 Tbsp olive oil (for cooking), optional

  • Chopped veggies: spinach, bell peppers, onions, optional

Directions

  1. Drain and press tofu for 10–15 minutes to remove excess water.

  2. Use your hands or a fork to crumble tofu into bite-sized pieces.

  3. Heat a nonstick skillet over medium heat. Add olive oil if using.

  4. Add crumbled tofu to the skillet. Sprinkle turmeric, nutritional yeast, salt, and pepper. Stir well to coat evenly.

  5. Continue cooking for 5–7 minutes until heated and slightly golden.

  6. Enjoy as-is or with whole-grain toast, avocado, or in a breakfast burrito.
